Our traditional teas offer a taste from much older processing styles closer to the original Tie Guan Yins and other oolongs that were traded early on through to Taiwan and Hong Kong. Many of those styles live on in Taiwanese teas, but have relatively recently changed to far greener styles of tea processing in the Chinese mainland. Certainly both styles are excellent, but in many ways they incomparable, and as unique as any Tie Guan Yin tea is to Long Jing tea.
This Hong Shui Tie Guan Yin shows our best hand in Tie Guan Yin selection. While slightly less intensely roasted than our other Lu Ye Hong Bian Traditional Tie Guan Yin, this Hong Shui Oolong's intense floral aroma permeates through the multiple layers of roasting to show all its true colours. The deep roasting mixes well with the delicate flavours to produce something that can be best compared to a fine mix of orchids, dark chocolate and cherries. Like other roasted Tie Guan Yins, this Hong Shui Tie Guan Yin is equally comfortable to drink and soothing on the stomach. However, teas this wonderful are consumed usually for their unsurpassed range of flavours, rather than simply comfort, and in this rare occurrence both are possible!
