Not quite a white tea, Jun Mountain Silver Needles or Jun Shan Yin Zhen is a hearty yellow tea from the Hunan Province known for it spicy culinary traditions and also the childhood home of Chairman Mao. Jun Mountain is an island mountain that is shrouded in cool mist and produces delicate teas with an ancient history dating back to the Tang dynastym. The very best of these were reserved as a tribute (tax) to the emperor. The characteristic mellow smokiness that comes from the charcoal firing is followed by a distinctive flavor that is ideal for matching with strong food flavors. It comes as no surprise that this tea was Chairman Mao's favorite, and one to hail from a place so well-known for its cuisine. |
